Instructions:
1. Put the shredded apples in a clean kitchen towel and squeeze over the sink to remove the excess liquid. Transfer the apple to a medium bowl. Add the almond meal, egg, egg white, protein powder, and cinnamon and stir evenly to combine. If the mixture seems too dry, add a splash of almond milk.

2. Melt 1 tablespoon coconut oil in a large skillet over medium heat. When it shimmers, working in batches, use a 1/4 cup measure to generously scoop the mixture into the pan to form 4 pancakes. Use a spatula to flatten the pancakes. Cook for 2 to 3 minutes, until bubbles appear on top. Flip the pancakes and cook on the other side for 2 to 3 minutes more, until lightly brown on the bottom. Transfer to a plate and repeat with the remaining batter.

3. Serve warm, topped with the yogurt and a sprinkle of cinnamon.

Ingredients

1 medium apple, peeled, cored, and shredded (about 3/4 cup)

1/2 cup almond meal or almond flour

1 large egg

1 egg white

1/2 cup plain protein powder

1/2 teaspoon ground cinnamon, plus more for serving

Unsweetened almond milk, if needed

1 to 2 tablespoons of coconut oil, for cooking

1 1/2 tablespoons yogurt, for serving
